Branston Chicken Coronation Salad!

(Serves 4) 400g Cooked chicken, folded into 200g light mayonnaise, 100g Branston pickle, juice + zest of 1 lime, 1 tbsp curry powder and 2 thinly sliced spring onions. Get 4 x little gem lettuces, place them on plates, garnish with mandarin segments, fresh coriander and dried cranberries. Also awesome to bring to BBQs!
