Easy Cheesy Vegetarian Frittata Bake
Gently cook 3 scrambled eggs, 150g mature cheddar and 6 tablespoons creme fraiche on the hob for 3 mins. Transfer to an oven dish. Spoon on 4 teaspoons of Branston pickle, add sliced aubergine, courgette and cherry tomatoes. Top off with grated mature cheddar and herbs. Bake for 25 mins at 180 C.
