From the king pin of sandwiches, Max Halley.
Ingredients
- 1 little ciabatta (crust everywhere is what you’re looking for, no sourdough nonsense)
- 100g ham cut up into chunks
- Lashings (2 heaped tbsps) of Branston Original Pickle
- A handful of pickled celery, carrot and cauliflower
- A generous amount of mayonnaise (1 heaped tbsp)
- A handful of cooked macaroni cheese pasta, cooled down completely, then deep-fried until golden and crispy
- A handful of shredded baby gem lettuce, parsley and pomegranate seeds
- A sprinkle of shoestring fries
- A bag of Ready Salted crisps
Method
Before actually putting this monster together, ready the separate elements:
- Get a spoon in the Branston
- Wet the bread all over quite liberally and throw it straight onto the shelves of a REALLY hot oven. This should take 3-5 minutes to do its magic
- Heat the ham until it’s warm the whole way through
- Mix the shredded lettuce with nice, big parsley leaves and the pomegranate seeds
- Chop up your pickle(s) of choice into uniform chunks
- Get a spoon in the mayonnaise
- Open the crisps and crush them completely in the bag with your hand
Now to build:
- Cut the bread in half horizontally
- Smother the inside of the top half of the bread in mayonnaise, making sure every bit is covered
- Pile your hot ham on the bottom half of the bread in a nice even layer
- COVER it in Branston Original Pickle
- Sprinkle the crunchy macaroni cheese on top of the ham and Branston
- Chuck your pickled vegetable chunks on top of this
- Then add a generous pile of the salad
- Cover the mayo’d top with the crushed-up crisps
- Lid on. Bit of a squish, cut it in half, then BOOM. The Branston Boss Sandwich is ready.
- Eat away!
